Muddle cutting it in the trade

A Winmalee school leaver is proving girls can cut it in a trade usually dominated by the boys, after being offered a butchery apprenticeship with Blue Mountain Meats.

Ebony Muddle’s work in the business as a weekend cashier gave her an insight into the world of modern butchery and she obviously liked what she saw, returning after finishing the HSC to ask for a role further behind the counter – as an apprentice butcher.

“We jumped at the chance to offer Ebony an apprenticeship as she’d already proven her work ethic, and willingness to progress her knowledge of food preparation,” said Blue Mountain Meats owner, Mark Greniewicz.

“And we are always keen to employ local youth that we can grow and retain for the local area in our business as an integral part of the team.”

Apprenticeship Support Australia’s Sam Gittins, who signed Ebony on to her apprenticeship, said the workings of a modern butchery business are vastly different from what they used to be, with some cuts delivered in cartons rather than as heavy carcasses.

“There is also a lot more room for creativity with the growth in value-added products and gourmet lines allowing for greater experimentation with cuts, flavours, extra ingredients and overall presentation,” he said.

Mr Greniewicz said Ebony was showing great promise. “She’s not frightened of honing her knife skills, or of handling a variety of meat cuts. She is especially pleased with the pink knife I managed to buy her when shopping for the tools for the trade!”
